Default Rear hatch help.

I was wondering, what is supposed to go in the rear hatch of an 87' Mustang GT? Is there supposed to be a board of some kind covering the spare tire well or something? Or if I bought a hatch carpet it'd come with a board like that or something to cover?

Also, how do I install the outer door handles? I can't seem to find a way to get them off and put the new ones on.
